Just Add :

  • 75g mozzarella, torn into pieces
  • 100g button mushrooms, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 2 tbsp breadcrumbs
  • 1 tbsp olive oil
  • 1 tsp chilli flakes
  • 1 spring onion, finely sliced
  • Small handful of fresh parsley or coriander, chopped
  • Salt and black pepper to taste

  • Step 1 - Golden Breadcrumbs This is the step most people skip and shouldn't. Heat a dry pan on medium heat no oil. Add the breadcrumbs and toast, stirring constantly for 2-3 minutes until they turn deep golden and smell nutty. Remove immediately and set aside on a plate. These will add an incredible texture contrast to the soft chewy rice sticks and melted cheese. Don't skip this.
  • Step 2 - Garlic Butter Mushrooms In the same pan, melt butter with olive oil on medium-high heat. Add sliced mushrooms in a single layer and resist the urge to stir leave them untouched for 2-3 minutes until they develop a deep golden colour on one side. Only then stir and cook for a further 2 minutes. Add minced garlic, chilli flakes, salt and black pepper. Toss everything together for 1 minute until the garlic is fragrant and coating every mushroom. Remove from heat and set aside.
  • Step 3 - Prepare the Topokki Prepare your Sun Hee Topokki Cheesy & Spicy rice sticks as per pack instructions. Stir through the Sun Hee Cheesy & Spicy sauce sachet thoroughly until every rice stick is fully coated. The sauce should be thick, glossy and deeply savoury. Keep on the lowest possible heat to keep warm.
  • Step 4 - The Cheese Pull Moment This is the step everyone is here for. Scatter the torn mozzarella pieces directly over the hot topokki in the pan. Place a lid on top or cover tightly with foil for 60-90 seconds. The residual heat will melt the mozzarella into long stretchy pulls. Lift the lid slowly and watch the cheese stretch this is your content moment if you are filming it.
  • Step 5 - Build the Dish Spoon the topokki carefully into a wide shallow bowl, keeping those cheese pulls intact as much as possible. Pile the garlic butter mushrooms on top. Scatter the golden toasted breadcrumbs generously over everything they will immediately start to absorb the cheesy sauce which is exactly what you want.
  • Step 6 - Finish & Serve Top with sliced spring onions and fresh parsley or coriander. Serve immediately the cheese pull only lasts so long and this dish is at its absolute best the moment it hits the table.

SERVING SUGGESTIONS :

  • Garnish with sliced spring onions, coriander or a squeeze of lime juice for extra flavour.
