Just Add :

  • 1 egg
  • 3 shallots, peeled and thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp oil for frying
  • 1 tsp soy sauce
  • 1 tsp honey or sugar
  • 1 spring onion, finely sliced
  • ½ tsp chilli flakes (optional for extra heat)
  • Toasted sesame seeds to finish
  • Salt to taste

Tips :

  • Make a bigger batch of crispy shallots than you need they keep in an airtight jar for up to a week and elevate everything
  • For an Indian twist, add a pinch of chaat masala over the finished dish just before serving the tanginess works brilliantly with the spicy sauce

  • Step 1 - Crispy Shallots This step is worth the extra few minutes crispy shallots take this dish from good to genuinely incredible. Heat oil in a small pan on medium heat. Add your thinly sliced shallots and fry slowly, stirring occasionally, for 6-8 minutes until they turn deep golden and crispy. Keep a close eye as they can burn quickly at the end. Remove with a slotted spoon and drain on kitchen paper. They will crisp up further as they cool. Keep the shallot-infused oil in the pan this is full of flavour and will be used for everything else.
  • Step 2 - Prepare the Topokki Prepare your Sun Hee Topokki Hot & Spicy rice sticks as per pack instructions. The rice sticks should be soft and chewy with a slight bite to them not too soft. Stir the Sun Hee Hot & Spicy sauce sachet through thoroughly until every rice stick is fully coated and glossy. Set aside.
  • Step 3 - Garlic & Sauce Using the reserved shallot oil, fry the minced garlic on medium heat for 1 minute until golden and fragrant. Add soy sauce and honey, stir quickly for 30 seconds to create a small glaze. Pour this directly over your prepared topokki and toss well. The garlic glaze adds an extra savoury depth that makes the sauce really sing.
  • Step 3 - Garlic & Sauce Using the reserved shallot oil, fry the minced garlic on medium heat for 1 minute until golden and fragrant. Add soy sauce and honey, stir quickly for 30 seconds to create a small glaze. Pour this directly over your prepared topokki and toss well.   • Step 4 - Crispy Fried Egg In the same pan on high heat, add a tiny splash of oil if needed. Crack in your egg and fry on high heat until the whites are fully set and crispy and lacy around the edges but the yolk remains runny. This contrast of crispy edges and a runny yolk against the chewy rice sticks is everything.
  • Step 5 - Build the Bowl Plate your saucy topokki in a wide shallow bowl or plate. Lay the crispy fried egg directly on top. Pile the crispy shallots generously over everything. Scatter spring onions and sesame seeds to finish. Add chilli flakes if you want an extra punch of heat.
  • Step 6 - Serve Immediately This dish waits for no one eat it straight away while the egg yolk is still runny and the shallots are still crispy. Break the yolk into the rice sticks and mix everything together as you eat.

SERVING SUGGESTIONS :

  • Garnish with sliced spring onions, coriander or a squeeze of lime juice for extra flavour.
